Ingredients

1.5 lbs chicken breasts or thighs, diced

2 tbsp oil

Salt, pepper, garlic powder to season
For the Sauce:

½ cup creamy peanut butter

¼ cup soy sauce

2 tbsp lime juice

2 tbsp honey or brown sugar

2 garlic cloves, minced

1 tsp grated ginger (optional)

1–2 tsp chili garlic sauce or Sriracha

½ cup coconut milk or water
For Serving:

Jasmine rice or noodles

Chopped peanuts, green onions, cilantro (optional)
Instructions

Season and sauté chicken in oil until cooked through. Set aside.

Whisk all sauce ingredients together until smooth.

Return chicken to pan, pour sauce over, and simmer 3–5 minutes.
