Description

Thai peanut chicken is a bold, creamy skillet meal made with tender chicken and a rich, garlicky peanut sauce. Quick to make, naturally gluten-free, and full of comforting flavor.


Ingredients

Scale
  • 1.5 lbs chicken breasts or thighs, diced

  • 2 tbsp oil

  • Salt, pepper, garlic powder to season

For the Sauce:

  • ½ cup creamy peanut butter

  • ¼ cup soy sauce

  • 2 tbsp lime juice

  • 2 tbsp honey or brown sugar

  • 2 garlic cloves, minced

  • 1 tsp grated ginger (optional)

  • 12 tsp chili garlic sauce or Sriracha

  • ½ cup coconut milk or water

For Serving:

  • Jasmine rice or noodles

  • Chopped peanuts, green onions, cilantro (optional)


Instructions

  • Season and sauté chicken in oil until cooked through. Set aside.

  • Whisk all sauce ingredients together until smooth.

  • Return chicken to pan, pour sauce over, and simmer 3–5 minutes.

  • Serve over rice or noodles with desired toppings.
