Description

This zesty Mediterranean avocado salad is packed with creamy avocado, crisp veggies, olives, and feta — all tossed in a bright lemon-oregano dressing. A vibrant and refreshing meal or side dish.


Ingredients

Scale
  • 2 ripe avocados, cubed

  • 1 ½ cups cherry tomatoes, halved

  • 1 English cucumber, sliced

  • ¼ red onion, thinly sliced

  • ⅓ cup Kalamata olives, halved

  • ½ cup feta cheese, crumbled or cubed

  • 2 tbsp chopped fresh parsley

  • Optional: mint or basil for garnish


Instructions

  • 3 tbsp extra-virgin olive oil

  • 1½ tbsp fresh lemon juice

  • 1 tbsp red wine vinegar

  • 1 garlic clove, minced

  • ½ tsp dried oregano

  • Salt and black pepper, to taste

Notes

  • Combine tomatoes, cucumber, onion, olives, and half the feta in a bowl.

  • Whisk together dressing ingredients in a small jar or bowl.

  • Pour dressing over salad and toss gently.

  • Add avocado and remaining feta. Toss carefully.

  • Garnish with herbs and serve immediately or chill briefly.
