This zesty Mediterranean avocado salad is packed with creamy avocado, crisp veggies, olives, and feta — all tossed in a bright lemon-oregano dressing. A vibrant and refreshing meal or side dish.
Ingredients

2 ripe avocados, cubed

1 ½ cups cherry tomatoes, halved

1 English cucumber, sliced

¼ red onion, thinly sliced

⅓ cup Kalamata olives, halved

½ cup feta cheese, crumbled or cubed

2 tbsp chopped fresh parsley

Optional: mint or basil for garnish
Instructions

3 tbsp extra-virgin olive oil

1½ tbsp fresh lemon juice

1 tbsp red wine vinegar

1 garlic clove, minced
-
½ tsp dried oregano
-
Salt and black pepper, to taste
Notes

Combine tomatoes, cucumber, onion, olives, and half the feta in a bowl.

Whisk together dressing ingredients in a small jar or bowl.

Pour dressing over salad and toss gently.

Add avocado and remaining feta. Toss carefully.

Garnish with herbs and serve immediately or chill briefly.
