Ingredients

1 lb Italian sausage (mild or spicy)

1 tbsp olive oil

1 onion, diced

3 cloves garlic, minced

4 cups diced Yukon Gold potatoes

6 cups chicken broth

3–4 cups chopped kale

1 tsp Italian seasoning

1 cup heavy cream or half-and-half

Salt and pepper to taste

Optional: ¼ cup grated Parmesan, pinch red pepper flakes
Instructions

Brown sausage in olive oil; remove and set aside.

Sauté onion and garlic in same pot until soft.

Add potatoes, broth, and seasoning. Simmer 12–15 minutes.

Stir in kale and cooked sausage. Simmer 5–7 minutes.

Lower heat and stir in cream. Simmer 2–3 minutes.

Taste, adjust seasoning, and serve hot.
