Ingredients

Scale
  • 1 lb Italian sausage (mild or spicy)

  • 1 tbsp olive oil

  • 1 onion, diced

  • 3 cloves garlic, minced

  • 4 cups diced Yukon Gold potatoes

  • 6 cups chicken broth

  • 34 cups chopped kale

  • 1 tsp Italian seasoning

  • 1 cup heavy cream or half-and-half

  • Salt and pepper to taste

  • Optional: ¼ cup grated Parmesan, pinch red pepper flakes


Instructions

  • Brown sausage in olive oil; remove and set aside.

  • Sauté onion and garlic in same pot until soft.

  • Add potatoes, broth, and seasoning. Simmer 12–15 minutes.

  • Stir in kale and cooked sausage. Simmer 5–7 minutes.

  • Lower heat and stir in cream. Simmer 2–3 minutes.

  • Taste, adjust seasoning, and serve hot.

Notes

  • Spinach can replace kale

  • Use plant-based sausage and coconut cream for vegan version

  • Freeze before adding cream for best texture
