Italian Penicillin Soup is a creamy, cozy twist on classic chicken soup — packed with tender chicken, herbs, soft pasta, and a broth that feels healing and deeply satisfying.


Ingredients

Scale
  • 1 lb chicken breast or thighs, diced or shredded

  • 2 tbsp olive oil or butter

  • 1 onion, diced

  • 23 garlic cloves, minced

  • 2 carrots, diced

  • 2 celery stalks, diced

  • 67 cups chicken broth

  • ¾ cup orzo or pastina

  • 1 tsp thyme

  • 1 bay leaf

  • 1 sprig rosemary

  • 2 tbsp lemon juice

  • ¼½ cup cream or half-and-half (optional)

  • Salt & pepper to taste

  • Fresh parsley, for garnish


Instructions

  • Sauté onion, garlic, carrots, and celery in oil until soft.

  • Add chicken, broth, thyme, rosemary, and bay leaf. Simmer 20–25 mins.

  • Add orzo and cook until tender (8–10 mins).

  • Remove from heat. Stir in lemon juice, cream (if using), and parsley.

  • Season to taste and serve warm.

Notes

  • Use rotisserie chicken for a shortcut.

  • Add greens for extra nutrients.

  • Skip cream for a lighter, dairy-free version.
