Ingredients

1 lb chicken breast or thighs, diced or shredded

2 tbsp olive oil or butter

1 onion, diced

2–3 garlic cloves, minced

2 carrots, diced

2 celery stalks, diced

6–7 cups chicken broth

¾ cup orzo or pastina

1 tsp thyme

1 bay leaf

1 sprig rosemary

2 tbsp lemon juice

¼–½ cup cream or half-and-half (optional)

Instructions

Sauté onion, garlic, carrots, and celery in oil until soft.

Add chicken, broth, thyme, rosemary, and bay leaf. Simmer 20–25 mins.

Add orzo and cook until tender (8–10 mins).

Remove from heat. Stir in lemon juice, cream (if using), and parsley.
