Ingredients

300 g (10 oz) pasta (whole wheat or regular)

400 ml (1 ¾ cups) crushed tomatoes or passata

2–3 tbsp cream cheese or dairy-free alternative

1 tbsp olive oil

1 onion, finely chopped

2 garlic cloves, minced

2 cups chopped vegetables (e.g. zucchini, bell pepper, spinach)

Salt, pepper, Italian herbs

Optional: Parmesan, fresh herbs, chili flakes
Instructions

Cook pasta until al dente. Reserve ½ cup pasta water.

Sauté onion in olive oil. Add garlic and cook until fragrant.

Add chopped vegetables and cook until tender.

Stir in crushed tomatoes and cream cheese. Simmer 5 min.

Add pasta and mix well. Adjust thickness with pasta water.

Serve with fresh herbs and cheese if desired.
