Description

A healthy one-pot broccoli mac and cheese made with creamy cheddar, fresh broccoli, and pantry staples. Light, comforting, and ready in under 30 minutes.


Ingredients

Scale
  • 2 cups dry elbow pasta (whole wheat or regular)

  • 2 ½ cups low-sodium vegetable or chicken broth

  • 2 heaping cups small broccoli florets

  • ½ cup milk (low-fat or whole)

  • 1 ½ to 2 cups shredded sharp cheddar cheese

  • ¼ cup plain Greek yogurt (optional)

  • 1 tsp Dijon mustard

  • ½ tsp garlic powder

  • ¼ tsp onion powder

  • Salt and pepper to taste


Instructions

  • In a large pot, combine pasta and broth. Bring to a boil, stir often.

  • After 5 minutes, stir in broccoli. Simmer until pasta is al dente and liquid is mostly absorbed (9–11 mins total).

  • Reduce heat to low. Stir in milk, mustard, garlic powder, and onion powder.

  • Turn off heat. Stir in cheese until melted. Mix in yogurt if using.

  • Taste, season, and let rest 5 mins before serving.

Notes

  • Add a splash of milk to loosen sauce if needed.

  • Use freshly grated cheese for smooth melting.

  • Stir in extra greens or proteins for variation.
