Ingredients

  • lbs boneless skinless chicken breast

  • ¼ cup olive oil

  • Juice of 1 lemon

  • 3 garlic cloves, minced

  • 1 tsp dried oregano

  • Salt and pepper

  • 2 cups cooked quinoa or brown rice

  • 1 cup cherry tomatoes, halved

  • 1 cucumber, diced

  • ½ red onion, thinly sliced

  • 4 cups chopped romaine or spinach

  • ½ cup hummus or tzatziki

Instructions

  • Marinate chicken in olive oil, lemon juice, garlic, oregano, salt, and pepper for at least 30 minutes.
