Ingredients

2 lbs Yukon Gold or red potatoes

2–3 tbsp olive oil

2 cloves garlic, minced (or 1 tsp garlic powder)

1 tsp salt

½ tsp black pepper

1 tsp chopped rosemary (or ½ tsp dried)

Zest of 1 lemon

1–2 tbsp fresh lemon juice

2 tbsp chopped parsley
Instructions

Preheat oven to 425°F and line a baking sheet.

Wash, dry, and cut potatoes into 1–1½ inch chunks.

Toss with olive oil, garlic, salt, pepper, and rosemary.

Spread in a single layer and roast for 35–40 minutes, flipping halfway.

Toss warm potatoes with lemon zest, juice, and parsley. Serve hot.
