Ingredients
For the Chicken:

For the Sauce:

Zest and juice of 1 lemon

1 tbsp Dijon mustard

½ tsp red pepper flakes

Salt & pepper

¼ cup chopped parsley

Optional: ¼ cup grated Parmesan

Optional: 1 cup baby spinach
