This easy potsticker soup is filled with tender dumplings, savory broth, and fresh greens — perfect for cozy dinners and quick weeknight meals.


Ingredients

  • 1 tbsp oil (neutral)

  • 2 garlic cloves, minced

  • 1 tbsp fresh ginger, minced

  • 68 cups chicken or vegetable broth

  • 2 tbsp soy sauce

  • 1 tsp sesame oil (plus more for garnish)

  • 1015 frozen potstickers (chicken, pork, or veggie)

  • 2 cups bok choy or napa cabbage, chopped

  • 1 cup mushrooms (optional), sliced

  • 2 green onions, sliced

  • 1 tsp rice vinegar (optional)


Instructions

  • Heat oil in a large pot over medium heat. Add garlic and ginger. Sauté until fragrant.

  • Pour in broth, soy sauce, sesame oil, and mushrooms. Bring to a simmer.

  • Add frozen potstickers and simmer for 6–8 minutes.

  • Stir in bok choy and cook for 2–3 more minutes.

  • Turn off heat and add green onions and vinegar (if using).

  • Serve hot with a drizzle of sesame oil or chili crisp.
