A rich, one-pan creamy chicken and mushroom skillet with fresh spinach and garlic. A cozy, fast dinner full of flavor and warmth.
Ingredients

1½ lbs chicken breasts or thighs

½ tsp garlic powder

½ tsp paprika

Salt and pepper

1–2 tbsp olive oil

1 tbsp butter
-
8 oz mushrooms, sliced

3 garlic cloves, minced
-
¼ cup onion or shallot, chopped (optional)

¾ cup chicken broth
-
½ cup heavy cream or ⅔ cup half-and-half

1 tsp Dijon mustard (optional)

2 cups baby spinach

¼ cup Parmesan (optional)

Fresh parsley, for garnish
Instructions

Season chicken with garlic powder, paprika, salt, and pepper.

Sear in oil 4–5 mins per side until golden and cooked through. Remove.

In same skillet, sauté mushrooms in butter until browned.

Add garlic and onion. Cook 1–2 mins.

Stir in broth, cream, mustard, salt, and pepper. Simmer 4–5 mins.

Add spinach and Parmesan. Stir until wilted and creamy.

Return chicken to pan. Simmer 2–3 mins to reheat.

Garnish with parsley and serve.
Notes

Use coconut milk for dairy-free.

Serve with pasta, rice, or mashed potatoes.
