Ingredients

1 lb boneless chicken breast or thighs, diced

4 crusty round bread rolls or boules

2 tbsp butter (for garlic butter)

3–4 garlic cloves, minced (divided)

1 tbsp chopped parsley

2 tbsp butter (for sauce)

1 cup heavy cream or half-and-half

¾ cup grated parmesan cheese

1 cup mozzarella (optional, for topping)

Salt and pepper, to taste

Optional: 1–2 cups cooked pasta
Instructions

Preheat oven to 375°F. Hollow out bread rolls and brush with garlic butter. Toast for 8–10 minutes.

Cook chicken in skillet with salt, pepper, and olive oil until browned. Set aside.

In same pan, melt butter and sauté garlic. Add cream and simmer 3–4 minutes.

Stir in parmesan until smooth. Add cooked chicken (and pasta if using).

Fill toasted bread bowls with mixture. Top with mozzarella if desired.

Bake 5–7 minutes until bubbly. Garnish and serve hot.
