Ingredients

¾ lb halibut or cod, cubed

½ lb shrimp, peeled and deveined

2 tbsp butter

1 onion, diced

1 carrot, diced

1 celery stalk, diced

Optional: ½ leek, sliced

2 tbsp flour
-
3 cups seafood or chicken broth

2–3 Yukon gold potatoes, diced

2 bay leaves
-
½ tsp dried thyme
-
1½ cups whole milk

1 cup heavy cream
-
Salt and pepper to taste

Garnish: parsley, chives, cracked pepper
Instructions

Melt butter in a large pot. Sauté onion, celery, carrot, and leek until softened.

Stir in flour and cook for 2 minutes.

Add broth, potatoes, bay leaves, and thyme. Simmer 12 minutes until potatoes are tender.

Stir in milk and cream. Add seafood and simmer gently 5–7 minutes until cooked.

Season to taste. Remove bay leaves and serve hot, garnished with herbs and bread on the side.
