Description

This Cowboy Casserole is a hearty, family-friendly dinner made with seasoned ground beef, creamy sauce, cheese, and crispy tater tots. Perfect for busy weeknights and ready in under an hour.


Ingredients

  • 1 lb lean ground beef

  • 1 can (10.5 oz) cream of mushroom soup

  • 1 cup frozen corn

  • 1 cup frozen green beans

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • Salt and pepper, to taste

  • 2 cups shredded cheddar cheese

  • 1 bag (32 oz) frozen tater tots

  • Optional: paprika or chili powder for seasoning


Instructions

  • Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.

  • In a skillet over medium heat, brown ground beef. Drain fat and season with garlic powder, onion powder, salt, and pepper.

  • Stir in cream of mushroom soup, corn, and green beans. Mix well.

  • Spread mixture in prepared dish. Top with 1 cup cheese.

  • Arrange tater tots in a single layer over the top. Sprinkle remaining cheese on top.

  • Bake uncovered for 35–40 minutes, or until tots are golden and filling is bubbling.

  • Let cool 5–10 minutes before serving.

Notes

To freeze, assemble but don’t bake. Wrap tightly and freeze for up to 2 months. Bake from frozen, adding extra time as needed. For extra crispy tots, broil briefly at the end.
