Description

Hearty green lentil vegetable soup made with fresh vegetables, tomatoes, herbs, and protein-rich lentils. Perfect for healthy meal prep or a cozy plant-based dinner.


Ingredients

Scale
  • 1 cup green lentils, rinsed

  • 1 onion, chopped

  • 2 carrots, diced

  • 2 celery stalks, diced

  • 3 cloves garlic, minced

  • 1 can (14.5 oz) diced tomatoes

  • 6 cups vegetable broth

  • 2 tbsp olive oil

  • 1 tsp thyme

  • 1 tsp oregano

  • ½ tsp ground cumin

  • 12 bay leaves

  • 2 cups chopped kale or spinach

  • Salt and black pepper to taste

  • Optional: 1 tbsp lemon juice


Instructions

  • Heat olive oil in a large pot. Sauté onion, carrot, and celery for 5–7 minutes. Add garlic.

  • Stir in tomatoes, spices, and lentils. Pour in broth and bring to a boil.

  • Reduce heat, cover, and simmer 30–35 minutes until lentils are tender.

  • Add greens and simmer 5 more minutes.

  • Finish with lemon juice and adjust seasoning. Serve warm.

Notes

  • Blend partially for a thicker texture

  • Add chili flakes for heat
