Ingredients

1 tbsp oil

1 medium onion, diced

3–4 garlic cloves, minced

2-inch piece fresh ginger, sliced or grated

6–8 cups chicken broth

1 lb chicken thighs or breasts

2 carrots, diced (optional)

2 celery stalks, diced (optional)

6 oz noodles (egg, rice, or your choice)

1 tbsp soy sauce (optional)

Salt and pepper to taste

1 tbsp lemon or lime juice (optional)

Fresh herbs for garnish (green onion, parsley, cilantro)
Instructions

Heat oil in a large pot. Add onion, garlic, and ginger. Sauté until fragrant.

Pour in broth and add chicken. Simmer 20–25 mins until chicken is cooked.

Remove chicken, shred, and return to pot.

Add noodles and cook until tender.

Season with soy sauce, salt, pepper, and citrus juice if using.
