Description

A bold and comforting Arabic-inspired tray bake with lemon garlic chicken and potatoes, roasted to golden perfection and infused with warm spices and citrusy brightness.


Ingredients

Scale
  • 23 lbs bone-in chicken thighs or drumsticks

  • 34 medium potatoes, cut into wedges

  • ¼ cup olive oil

  • Juice of 2 lemons + zest of 1

  • 68 garlic cloves, minced

  • 1½ tsp salt

  • 1 tsp black pepper

  • 1 tsp allspice or baharat

  • ½ tsp paprika

  • Optional: ½ tsp cumin or coriander

  • Fresh parsley, for garnish


Instructions

  1. Mix marinade with lemon juice, garlic, oil, and spices. Marinate chicken 1 hour or overnight.

  2. Toss potatoes with oil, salt, and spices.

  3. Arrange potatoes and chicken in baking dish. Pour marinade over.

  4. Bake at 425°F (220°C) for 45–55 minutes, flipping potatoes halfway.

  5. Broil 3–5 minutes for extra crispness. Garnish and serve hot.

Notes

Serve with salad, yogurt, or warm flatbread. For extra browning, broil briefly at the end.
