Description

Juicy, glazed char siu chicken marinated in a sweet-savory hoisin sauce and baked or grilled until sticky and caramelized. A bold, flavorful Chinese-inspired dinner that’s easy to make at home.


Ingredients

For the Marinade:

  • 2 tbsp hoisin sauce

  • 2 tbsp soy sauce

  • 1 tbsp oyster sauce

  • 1 tbsp honey or brown sugar

  • 1 tbsp Shaoxing wine (or dry sherry)

  • 1 tsp five-spice powder

  • 1 tsp ginger, grated

  • 2 garlic cloves, minced

  • Optional: 1–2 drops red food coloring

For the Chicken:

  • 2 lbs boneless, skinless chicken thighs

  • Neutral oil (for grill or pan)

  • Scallions or sesame seeds (optional for garnish)


Instructions

  1. Whisk marinade ingredients. Reserve 2–3 tbsp for basting.

  2. Marinate chicken in remaining sauce for at least 1 hour (up to 12).

  3. Oven: Bake at 400°F for 20–25 mins on a wire rack. Broil 2–3 mins to finish.
    Grill: Grill 4–5 mins per side, basting with reserved sauce.

  4. Let rest 5 mins. Slice and serve over rice or noodles.

Notes

  • Use bone-in thighs for juicier results (adjust cook time).

  • Sauce also works well on pork, tofu, or wings.

  • Red food coloring is traditional but optional.
