Description

Creamy Cajun sausage pasta made in one pot with tender penne, smoky sausage, and a lightly spiced cream sauce. Bold, cozy, and perfect for weeknight dinners.


Ingredients

Scale
  • 12 oz andouille or smoked sausage, sliced

  • 8 oz penne pasta (dry)

  • 2½ cups chicken broth

  • 1 cup heavy cream

  • ½ cup grated Parmesan

  • ½ onion, diced

  • 23 garlic cloves, minced

  • 23 tsp Cajun seasoning

  • 1 tbsp olive oil or butter

  • Optional: bell pepper, parsley, lemon juice


Instructions

  • Sear sausage in oil until browned. Remove and set aside.

  • Sauté onion and garlic until soft. Add bell pepper if using.

  • Stir in broth, cream, and Cajun seasoning. Bring to a simmer.

  • Add pasta and cook uncovered for 10–12 minutes, stirring often.

  • Return sausage to pot and stir in Parmesan. Simmer 2 more minutes.

  • Garnish with parsley or lemon zest and serve hot.

Notes

Adjust spice to taste. Add spinach, mushrooms, or cherry tomatoes for variation. Use GF pasta or dairy-free cream if needed
