Description
Creamy Cajun sausage pasta made in one pot with tender penne, smoky sausage, and a lightly spiced cream sauce. Bold, cozy, and perfect for weeknight dinners.
Ingredients

12 oz andouille or smoked sausage, sliced

8 oz penne pasta (dry)

2½ cups chicken broth

1 cup heavy cream

½ cup grated Parmesan

½ onion, diced

2–3 garlic cloves, minced

2–3 tsp Cajun seasoning

1 tbsp olive oil or butter

Optional: bell pepper, parsley, lemon juice
Instructions

Sear sausage in oil until browned. Remove and set aside.

Sauté onion and garlic until soft. Add bell pepper if using.

Stir in broth, cream, and Cajun seasoning. Bring to a simmer.

Add pasta and cook uncovered for 10–12 minutes, stirring often.

Return sausage to pot and stir in Parmesan. Simmer 2 more minutes.

Garnish with parsley or lemon zest and serve hot.
Notes
Adjust spice to taste. Add spinach, mushrooms, or cherry tomatoes for variation. Use GF pasta or dairy-free cream if needed
