Ingredients

2 slices bread (white, wheat, or sourdough)

2 large eggs

1 tbsp milk or cream (optional)

¼ cup shredded cheese or 1 cheese slice

Salt & pepper, to taste

1 tsp butter or oil

Optional: chopped onions, green chili, herbs, cooked meat
Instructions

Whisk eggs with salt, pepper, and optional milk and add-ins.

Heat butter in a skillet. Pour in eggs.

Place bread slices on top of eggs. Cook 1–2 mins until set.

Flip the whole layer. Fold extra egg edges inward.

Add cheese, fold sandwich in half, cover, and cook 2 mins more.

Serve hot, sliced in half if desired.
