For the Chicken:

  • lbs chicken breast or thigh, chopped

  • 1 tbsp soy sauce

  • 1 tbsp cornstarch

  • ½ tsp black pepper

For the Veggies:

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 green bell pepper, sliced

  • 1 small onion, sliced

  • 2 garlic cloves, minced

  • 1 tbsp fresh ginger, grated

  • 12 tbsp neutral oil

For the Sauce:

  • 3 tbsp soy sauce

  • 1 tbsp dark soy sauce (optional)

  • 1 tbsp oyster sauce

  • 1 tbsp honey or brown sugar

  • 1 tbsp rice vinegar or Shaoxing wine

  • ½ cup water

  • 1½ tsp fresh black pepper

  • 1 tsp cornstarch


Instructions

  1. Toss chicken with soy sauce, cornstarch, and pepper. Marinate 10–15 mins.

  2. Stir together sauce ingredients in a bowl.

  3. Sear chicken in oil until golden and cooked through. Remove and set aside.

  4. Stir-fry bell peppers, onion, garlic, and ginger for 3–4 mins.

  5. Return chicken to pan. Pour in sauce and simmer 2–3 mins until thickened.

  6. Serve hot over rice or noodles, garnished with scallions or sesame seeds.

Notes

  • Use freshly cracked pepper for best flavor.

  • Add veggies like broccoli, snap peas, or spinach to bulk it up.
