Ingredients

  • 1 lb Italian sausage (mild or spicy)

  • 1 tbsp olive oil

  • 1 small onion, diced

  • 2 carrots, diced

  • 2 garlic cloves, minced

  • 4 cups low-sodium chicken broth

  • 1 tsp Italian seasoning

  • ¼ tsp crushed red pepper flakes (optional)

  • 1 (16 oz) package potato gnocchi

  • 1 cup heavy cream

  • 2 cups fresh spinach or kale

  • ½ cup grated Parmesan cheese

  • Salt and black pepper, to taste


Instructions

  • Brown sausage in olive oil in a large pot. Remove and set aside.

  • Sauté onion, carrots, and garlic until soft, about 5 minutes.

  • Add broth, Italian seasoning, and red pepper flakes. Simmer.

  • Add gnocchi and cook 3–5 minutes, until tender.

  • Return sausage to pot. Stir in cream and spinach. Simmer 2–3 minutes.

  • Stir in Parmesan. Season with salt and pepper to taste.

  • Serve hot, topped with extra cheese or herbs.

Notes

Store up to 4 days refrigerated. Reheat gently. Use gluten-free gnocchi or dairy-free cream alternatives as needed.
