Ingredients

1 lb Italian sausage (mild or spicy)

1 tbsp olive oil

1 small onion, diced

2 carrots, diced

2 garlic cloves, minced

4 cups low-sodium chicken broth

1 tsp Italian seasoning

¼ tsp crushed red pepper flakes (optional)

1 (16 oz) package potato gnocchi

1 cup heavy cream

2 cups fresh spinach or kale

½ cup grated Parmesan cheese

Salt and black pepper, to taste
Instructions

Brown sausage in olive oil in a large pot. Remove and set aside.

Sauté onion, carrots, and garlic until soft, about 5 minutes.

Add broth, Italian seasoning, and red pepper flakes. Simmer.

Add gnocchi and cook 3–5 minutes, until tender.

Return sausage to pot. Stir in cream and spinach. Simmer 2–3 minutes.

Stir in Parmesan. Season with salt and pepper to taste.

Serve hot, topped with extra cheese or herbs.
Notes
Store up to 4 days refrigerated. Reheat gently. Use gluten-free gnocchi or dairy-free cream alternatives as needed.
